Recipe of the Day


Sour Cream Muffins

(Makes 12 Muffins)

Ingredients:

  • 2 cups All-purpose Flour

  • 1 Tbs. Baking Powder

  • 1/8 tsp. Baking Soda

  • 1/2 tsp. Salt

  • 1/2 cup Granulated Sugar

  • 1/4 cup Margarine, melted

  • 1/2 cup Fat-free Sour Cream

  • 1/4 cup Egg Substitute

  • 3/4 cup Skim Milk


  • Pre-heat oven to 425-F degrees and lightly spray two large muffin tins with non-stick cooking spray.


    In a large mixing bowl, combine sifted flour, baking powder, baking soda, salt, and sugar. Stir to blend dry ingredients.


    In a small mixing bowl, combine melted margarine, sour cream, egg substitute, and skim milk. Blend with a wire whisk until wet ingredients are thoroughly combined. Add liquid ingredients to the dry ingredients and stir until just blended.


    Spoon the batter into the muffin tins, equally distributing the batter to each well. Bake for 15 to 20 minutes until the muffins are golden brown. Remove the muffin tins to a wire rack and let cool for about 5 minutes. Invert tins and completely cool muffins. Store in an airtight container for up to 3 days.

    I will propose that the state take over the full costs of the K through 12 general education formula and eliminate the state-mandated general education levy by local school districts.
    Combined with other changes to the property tax system, this will result in net property tax relief of over $800 million annually to all types of property across Minnesota,
    And farmland will be exempted from both the local operating referendum and the statewide tax.
    The motor vehicle registration tax.
    It was a bad tax last year when we lowered the tax to a maximum of $99 from the third to tenth years, and it's still a bad tax.
    In my budget,
    I will propose that we continue to move toward my original goal that no one ever pay more than $75 dollars for license tabs.

    Lost
    Hi, I have been lost for a while. I got my grades back, I don't remember if I told you all already or not but I got 3 A's a B, and a C. I am happy. My GPA is 3.50 now. Tomorrow ~G~ and I go to pick up my books for this next semester. My "loan/Grant" money came in for my driving cost to school and back (used for gas only) $952.oo good god thats a lot of gas money. Thank god for the loan! Books should only be about $500.oo This time and Financial aid loan will hopefully cover those. I am not feeling well, kinda sad, but I don't know why? Crazy right, I know.

    Recipe today is...



    Tangy Vegetable Slaw


    (Serves 4-Makes about 2 Cups)

    Ingredients:



    • 1 Tbs. fresh Lime Juice

    • 1 tsp. Chili Oil (See Kitchen Staff Tip)

    • 1 tsp. Granulated Sugar

    • 3/4 cup Carrots, julienne

    • 3/4 cup Zucchini or Summer Squash, julienne

    • 1/4 cup Jicama, julienne

    • 1/4 cup Radish, julienne


    In a medium bowl whisk together the lime juice, chili oil, and sugar. Add the vegetables and toss to coat. Season with salt and freshly ground black pepper to taste. Cover and refrigerate at least one hour prior to serving.



    Kitchen Staff Tip: You can prepare your own Chili Oil by combining 1/2 cup canola oil, 1/4 cup sesame oil, 1/2 a seeded Scotch bonnet chili, 1/3 cup chopped cilantro stems, one tablespoon of freshly grated ginger, and two tablespoons of finely chopped shallots in a non-reactive saucepan. Bring the mixture to a boil over medium heat. Remove the saucepan from heat and let cool to room temperature. Strain the oil through a fine sieve into a small container. Discard the solids. The Chili Oil will keep, refrigerated, for up to two weeks. It contains about 40 calories and 4.5 grams of fat per teaspoonful.




    Great side dish or salad. Each serving contains only 35 calories with 1 gram of fat, so double the batch and enjoy. Created on Jan. 10 2001

    Monday, January 1

    Old School has had a week plus one day off of work paid!! Cool!! All we have been doing is shoveling the snow around our Apartment complex. We have been cleaning the house this weekend and only have a few rooms left to do. The livingroom is so clean now it echo's. When the kids came home from grandmas tonight, we took them sledding on the big sliding hill it town. We stayed for about an hour. Millie and Vonnie ended up wiping out, getting a good crack on the melon. Ace couldn't keep out of the way of the other kids. After he would make it down the hill then would start back up, but not walking on the side like all the other kids do, he had to walk straight up the middle and hold every one else up from sliding down. I have such a circus for a family but their mine and I love them!
